Marcia's Birthday Minion Cake

My good friend Marcia was turning 22 and she has a strange obsession with the minions from the Despicable Me films so of course it had to be a minion cake. She's been a very good friend since I moved back to North Wales even though we haven't known each other long so I put a lot of effort into getting this right. I started with stacking some round madeira cakes. I also baked one madeira cake in a bowl to make a curved a top, I put this on top of the stacked round cakes to make a find of half pill top shape. I put butter cream and jam in between all the layers. I then covered the whole thing in butter cream and then coated it in a layer of marzipan. I took some yellow fondant and coated the whole cake in a layer of if. I planned out my minion using a sharp tool and made marks for where the eye should be and the trousers and so on, using an image of the minion to help me. I made some denim look fondant be taking some dark blue fondant and some light blue fondant and kneading them together leaving them streaky. I then rolled it out and cut the shape of the dungarees using a pizza cutter. I made a front and a back, then two strips to make the shoulder straps and placed them over the top. I stuck everything in place using edible glue. I took a pointed and added the stitch detail along all the edges.
I started the eye buy rolling out a thin layer of white fondant and cutting out a circle and sticking it in place. I did the same with some brown fondant only cutting a much smaller hole and with some black fondant cutting an even smaller hole. I then made a reflection in the eye by rolling a small ball of white fondant and flattening it to make a small disk.
For the goggle I used a panel smoother to roll out a piece of grey fondant into a long tube. The panel smoother makes rolling up sausage shapes a lot easier and they are instantly smooth. I then wrapped this tube around the eye and cut where the tube met and stuck it in place smoothing over where needed.
The head strap was made using black fondant rolled out in a long length then cut using a pizza cutter and a long ruler there is a specific tool available for this I just don't have it! I stuck it in place cutting the strap where it met the goggle.
The mouth was more difficult as it was a specific shape I couldn't use cutters for so again I studied the image of the minion and using a pizza cutter I cut out the mouth in black and the tongue in red and then used a knife to cut the buck teeth and stuck everything in place.
I used black fondant to mold a hand, I knew I wanted mine to and the same yellow fondant as I used before to roll out two little sausages for arms. I also rolled out a long thin tube of black fondant and made some hair. I finished off the minion with Marcia's name and the 22 on his front. I also added a couple of little sugar jasmine for extra showy-offyness!
Oh and I also dusted the goggle with some metalic silver dust so give it that tin effect.
I was really please with this cake and I know Marcia loved it, she even stopped everyone from eating the front so that she could keep looking at it for longer and that made me happy. It tasted good too!

Here's Marcia and our friend Tomas out for her birthday. Not long after her birthday she flew off to Mexico to work at a reservation for sea turtles. Alright for some!

Scotts Congratulations Cake

This was a cake I made for my cousin Scott who managed to get a great place at uni and this was just a little cake I made for him just to say congratulations you're a smart guy!! It's made using a square cake cut into a kind of bottom heavy 8 shape. It's then covered in butter cream and marzipan. I used an orange fondant and covered the whole thing. I added the white detailing on the belly and the face.
I took the orange fondant, cut it into three, added some yellow to one, some red to another one and so I had 3 varying shades of orange. I used a rose petal cutter and cut out lots of these shapes for feathers. It's important to start at the bottom and finish at the top so that you get a layered feather effect. After that was the beak and feet which was just yellow fondant molded into shape. I then made the eyes using black and white fondant. When I make eyes, I always take a small piece of fondant roll it into a ball and cut it exactly in half. I then roll these two half into balls and press them down, usually using a panel smoother, to make two equal discs for the eyes.
It's always good to add a little spec of white on top the black pupil to act as a reflection.
I then rolled out some black fondant into thin noodles. and cut equal lengths to make glasses.
The hat was made using a little disc of fondant as the base and some fondant rolled out on some cardboard as the top. I then made some strips of black fondant to act as the tassels.
I was quite pleased with this one I must say, I think it would work on a smaller scale as well as it was quite simple and you can always get smaller petal cutters for feathers.
Hope I can make it again for someone.

Josh's Birthday Mario Boo Cake

My stepbrother Josh turned 14 and he loves (like every other 14 year old boy) computer games. My mom had bought me a new cake dec book so we were looking through it with Josh and he picked out a spooky castle cake, this cake was only tiny so we thought we'd make a big castle and add some Mario "Boos". We stacked some round sponge caked and covered it marzipan and grey fondant. The fondant wasn't great so it rippled and cracked. It should have gone on thicker, but it didn't matter as the cracks only helped with the castle theme. We made little fondant boulders and put them all over and painted on some crack detail, windows, boo eyes, a port coulis etc.
I then went on to make my Boos. I took six cupcakes, and used butter cream to stack them top to top and covered the, both in a thick layer of cutter cream.

I then covered them in marzipan and added another layer of white fondant and smoothed them over.
My mom covering up the cracks.

Easter Nests

When I was a kid I used to make these Easter nests. They are made using just shredded wheat cereal, torn up, mixed together with melted chocolate and molded into nest shapes. Add on some chocolate mini eggs and some fuzzy chicks and rabbits and they are the perfect treat for Easter. The kids love them, I know my nephew did.

I've been taking a sugar flowers class as well and just for this Easter post I thought I'd show off my daffodils. They are made using a special flower paste and a daffodil putter. I will do a sugar flowers post at some point in greater detail. Until then here's a little look.

Connors Birthday Cupcakes

My little brother Connor turned 14 in March and we were having trouble coming up with an idea for a cake. He loves his sweets and wanted cupcakes so we put together this little cupcake display. We alternated between blue and green, blue with butter cream and green fondant. then we added sweets and decorations.

Here's Connor having a birthday hot chocolate with me in the coffee shop.

My 21st

I just thought I'd put a quick post out for my 21st Birthday in 2012. We had quite a big party so my mum made a 3 tier cake. We had a black, pink and leopard print theme and this is the cake.
The cake was also my present because the Ariel topper is a real Disney porcelain model. It was on a stand which was then surrounded by lots of little Disney princesses. I know I'm 21 but I like Disney and I love my Ariel model. Thank you mom!

Halloween 2012

whoa it's been such a long time since I've posted anything! I've been so busy making cakes I've not had time to blog about them! quick catch up!
This was Halloween 2012 and my sister and I were living together at the time. we bought pumpkins and made lanterns as usual and I decided to make pumpkin pie cupcakes. They were basically a sponge mix made with boiled pumpkin and cinnamon. Fresh out of the oven they were so delicious and sweet it was amazing. I iced them with very little basic glace icing in orange and they didn't last the day they were so good! My sister also roasted the pumpkin seeds and we had some family round for a bit of a Halloween treat.
Our lanterns, mines the weird one on the right, not sure what I was going for there, but the multi-coloured lights inside were pretty cool.
My sister Cat and I with out faces painted, just because Halloween is a great excuse for getting the face paints out.
Yum yum yum, can't wait for pumpkin season to come round again because they were sooooooo good!!!! Hot damn!
Here's my recipe for Halloween Pumpkin Pie Cupcakes:
Ingredients:
260g flour
150g sugar
110g softened butter
2 eggs beaten
225g mashed cooked pumpkin ( I used the shavings from carving my lantern and boiled it until it was soft, I think thats what made the cakes so soft)
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
170g pecans ( I didn't add pecans) I added a little more nutmeg and cinnamon instead.
  • Preheat the oven to 190C. Line a tray with cake cases (normally use a muffin tin and muffin liners). Sift all the dry ingredients EXCEPT for sugar together in a bowl. Cream together the butter and sugar in a separate bowl and beat in the eggs little by little. Add the pumpkin and stir through.
  • Stir in the dry ingredients and the pecans (if using) and mix well. Fill each cake case 3/4 full and place the tray in the middle of the oven. Bake for 20 - 25 minutes. (You can always tell if your cakes are done if you press the top and they bounce back up).
  • When they are done allow to cool in the tin for 5 minutes before putting them on the wire rack to cool, allowing them to cool down slowly.
  • Eat them fresh out the oven as they are sweet enough or allow them to cool down completely before decorating them.
